These little pecan bites! OMG. I can’t wait for you to try them! Who needs cookies filled with gluten, dairy, sugar and junky chemicals and fillers when you can have a MUCH HEALTHIER treat with the same yummy flavor?!
With just 0.6 net carbs and almost 2 g of protein in each bite, you can enjoy these any time! With breakfast, for an afternoon snack or evening treat.
SO buttery, so much pecan FLAVOR + that delicious hint of sandy texture. YUM. I could eat these every day of my life, forever. #obsessed
Healthy No-bake Cookies with 5 Simple Ingredients
Goodbye gluten/grains/flour, SUGAR and additives. We’re using 5 SIMPLE, basic, wholesome ingredients:
- Pecans
- Buttery Coconut Oil
- Monkfruit
- Coconut (for a bit of texture; there’s no coconut flavor)
- Salt
I’m BLOWN away how these ingredients combined make SUCH an amazing flavor. My hubs & I both said, “WOW” when we tasted these.

Just Minutes to Make!
The key step in making the pecan flavor POP is to toast your pecans. Just put them in a dry skillet for about 5-7 minutes until your kitchen is filled with that wonderful aroma. LOVE IT.
Then throw everything in a food processor and blend it into a dough. That’s it!
No baking, nothing complicated. Just scoop the dough into balls, smooth it out a little with your hands and pop it in the freezer to firm up for 5-10 minutes. SO EASY.
Handle with Care
Note: handle these balls with care. They are a little fragile when you first scoop them.
Packing the dough together super tight when scooping, and compacting them with your hands helps them stay together.
Once chilled, they will hold together better. If you don’t want ’em as fragile, simply bump up the amount of oil to 2 or 2.5 Tbs. That will make them firmer. It’s up to you 🙂
Personally, I love them just the way they are.
To Store
Keep refrigerated for about 10 days tightly wrapped in an airtight container. May be frozen for longer storage (thaw for a few minutes before eating)

Instructions
Prep your ingredients:

Toast pecans in a dry skillet for 5-8 minutes over medium heat, stirring occasionally, until fragrant and crisp.

Blend ⅓ cup monkfruit into a powder (about 10 seconds) using a small blender. (tip: make some pb balls with the leftover powder!)
To make the bites:

Add pecans and remaining ingredients (except water) in a food processor and pulse until finely ground.

Add water at the end and pulse again. Mixture should stick together when squeezed between your fingers. If too crumbly, add another ½ Tbs water or coconut oil (melted)

Use a cookie scoop to make balls (pack the dough very firmly so they hold together). Smooth the bites with your hands by carefully squeezing and forming, if you like.

Freeze for 5-10 minutes to set. ENJOY 🙂
