Congee Rice Porridge With Shrimp

Alexandra Grablewski/Getty Images In most Southeast-Asian countries, breakfast often takes the form of soup, noodles, or “congee” (porridge), which is actually a kind of thick rice soup. This rice porridge recipe is a good example, although I am more apt to make it for dinner. It’s a soothing, comfort food, and excellent during cold weather.

Pork belly congee with ginger and soy

Ingredients200g jasmine rice1 kg slab of belly pork, rinsedlarge knob fresh ginger, peeled and julienned2.5 litres cold watersea salt and pepper2 tbsp soy sauce2 hard-boiled eggs, halved or quartered2 spring onions, finely chopped2 tbsp salted peanuts1 tsp sesame seeds1 tsp sesame oilMethod1. Rinse the rice well in cold running water and drain.2. Combine rice, pork belly, half the ginger and cold water
