Eggless Coleslaw – Homemade Real Food Recipe

Ingredients:

  • 1 medium cabbage
  • 1 carrot
  • 2 Tbsp celery chopped
  • ¾ cup Greek Yogurt
  • ¼ cup white vinegar
  • 1 tsp mustard powder or Dijon mustard
  • ½ tsp black pepper
  • Pinch cayenne pepper
  • Salt to taste
  • 2 tsp sugar

Instructions:

  1. Chop cabbage very finely or grate. Using a food processor with the shredding blade is best.
  2. Grate the carrot.
  3. Finely chop celery stock and leaves.
  4. Mix all dressing ingredients in a bowl.
  5. Whisk well, and add some water or butter milk to thin it. Cabbage may release some water later.
  6. Add all veggies to the dressing and mix in.
  7. Refrigerate overnight or for a few hours.
  8. Serve as salad or side dish.
