Salad
- 1 12 oz. package No Yolks Extra Broad Noodles
- 2 c. Shredded chicken
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1 carrot, shredded
- 1 Tbsp. Thinly sliced green onions
- 2 Tbsp. Chopped peanuts
- 2 tsp. sesame seeds
Dressing
- 1/2 c. creamy peanut butter
- Juice of 2 limes
- 1/4 c. low-sodium soy sauce
- 3 Tbsp. rice vinegar
- 2 Tbsp. grated fresh ginger
- 1 Tbsp. sesame oil
- 1 clove garlic, minced
- 1 tsp. crushed red pepper flakes

- Step 1Cook No Yolks Extra Broad Noodles according to package directions, then drain.
- Step 2In a medium bowl, whisk together all dressing ingredients.
- Step 3In a large bowl, combine chicken, bell peppers, cucumber, carrots, and cooked noodles.
