large eggs, hardboiled and peeled
- 1/4 cup
creamy mayonnaise
- 1/4
avocado, chopped
- 1/4 cup
Swiss cheese, finely shredded
- 1/2 tsp.
Dijon mustard

Freshly ground black pepper

slices of bacon, cooked and chopped

- Step 1Halve eggs lengthwise.
- Step 2Carefully remove yolks and place in medium bowl. Place whites. hollow sides up, on plate.
- Step 3With fork, mask yolks. Then add mayonnaise, avocado, cheese and Dijon mustard. Stir until well mixed. Season yolk mixture with black pepper.
- Step 4Spoon yolk mixture back into egg white hallows and top each egg half with chopped bacon.
- Step 5Store eggs in airtight container in refrigerator up to 1 day.
