A Healthy Mexican Salad With Crosnes Served With Cilantro-Yogurt Dressing


  • Ingredients for Salad:
  • 1 cup of corn; if fresh, blanched; if frozen, defrosted and blanched/steamed
  • 1/4 cup of feta cheese
  • 14 ounces can black beans, rinsed and drained
  • 1 small red onion, thinly sliced
  • 1/2 cup cosnes, roughly chopped or grated jicama
  • 1 green bell pepper, roughly chopped
  • 1 pound shrimp, deveined and cleaned
  • Boston or romaine lettuce, cleaned and torn to pieces
  • salt and pepper to taste
  • Ingredients for Cilantro-Yogurt Dressing:
  • The juice of one lime
  • salt and pepper to taste
  • 3 tablespoons of Greek Yogurt
  • 1/4 cup olive oil
  • 2 tablespoons white balsamic vinegar
  • a dash of Tabasco sauce
  • a pinch of smoked paprika
  • 1 cup cilantro, finely chopped
  • 1 small clove of garlic, minced
  • 1 Serrano chili, seeds removed and diced
  • Crush red pepper, to taste


  1. Making the salad: Toss together all salad ingredients and set aside.
  2. Making the Cilantro-Yogurt dressing: Whisk all the ingredients for the Cilantro-Yogurt Dressing together.Set aside.
  3. Place salad in a bowl or on a plate. Allow guests to spoon desired amount of Cilantro-Yogurt dressing over their salad.
  4. Enjoy.
