Ingredients:
- Ingredients for Salad:
- 1 cup of corn; if fresh, blanched; if frozen, defrosted and blanched/steamed
- 1/4 cup of feta cheese
- 14 ounces can black beans, rinsed and drained
- 1 small red onion, thinly sliced
- 1/2 cup cosnes, roughly chopped or grated jicama
- 1 green bell pepper, roughly chopped
- 1 pound shrimp, deveined and cleaned
- Boston or romaine lettuce, cleaned and torn to pieces
- salt and pepper to taste
- Ingredients for Cilantro-Yogurt Dressing:
- The juice of one lime
- salt and pepper to taste
- 3 tablespoons of Greek Yogurt
- 1/4 cup olive oil
- 2 tablespoons white balsamic vinegar
- a dash of Tabasco sauce
- a pinch of smoked paprika
- 1 cup cilantro, finely chopped
- 1 small clove of garlic, minced
- 1 Serrano chili, seeds removed and diced
- Crush red pepper, to taste
Instructions:
- Making the salad: Toss together all salad ingredients and set aside.
- Making the Cilantro-Yogurt dressing: Whisk all the ingredients for the Cilantro-Yogurt Dressing together.Set aside.
- Place salad in a bowl or on a plate. Allow guests to spoon desired amount of Cilantro-Yogurt dressing over their salad.
- Enjoy.
