Carrot cake overnight oats

Oats are among the healthiest grains on earth. They’re a gluten-free whole grain and a great source of important vitamins, minerals, fiber, and antioxidants. This recipe is delicious, quick and easy to make. —Soul Food Kitchen

Ingredients

  • 1/3 cup

    oats


  • 2 tablespoons

    chia seeds


  • 1/2 cup

    oat milk


  • 1

    small grated carrot


  • pinch

    ground ginger, cinnamon and salt


  • 1/4 cup

    chopped dried apricots


  • 1 tablespoon

    pistachio nuts


  • 1 tablespoon

    favorite nut butter

Directions
  1. Mix the oats, chia and enough oat milk to cover and place in the fridge. In the morning add the spices, carrot, mix then top with apricots, pistachio and nut butter.
