Ingredients:

  • 16 oz Tyson boneless, skinless chicken breast
  • 2 large Egg, fresh, whole, raw
  • 1/2 cup Parmesan Cheese, grated
  • 1 dash Salt
  • 1 dash Pepper, black
  • 2 1tsp Coconut Oil for frying

Instructions:

  1. Chop the chicken into bite sized pieces.
  2. In a bowl, whisk together the eggs, parmesan and your seasoning of choice to create the dipping batter.
  3. Dip the chicken nuggets into the batter and place onto a plate.
  4. Heat a little coconut oil/butter in afrying pan.
  5. When hot, carefully place the prepared chicken into the frying pan.
  6. Fry in batches if your pan is not big enough to easily hold all of the chicken nuggets.
  7. Cook until golden, cooked through and crispy on both sides.Serve with your choice of low carb dipping sauce.
