Looking for an easy homemade comfort breakfast food? My Easy Homemade Comfort Food Butter Pancakes are a delicious way to deliver a yummy breakfast to your family. This butter pancake recipe is made from scratch with common ingredients most people already have in their kitchens. The butter is built right into the pancakes, so there is no need to top the pancakes with butter. Top them with syrup; they are so scrumptious, delicately thin, and buttery!

I love easy recipes. We are a busy family so if I have an easy recipe, it is my first pick.

My boys wanted pancakes one morning, so I agreed to whip some up because it was an open Saturday morning so I had the time to make them. I checked my pantry and my pancake mix was out, so out of necessity I just made up a recipe. But I hit another snag in my recipe creation, I had no oil. This was a problem. My next thought was about butter. I had plenty of butter, so my butter pancake recipe was born! I knew the combination was a hit because everyone, including myself, loved these pancakes.

Any recipe with butter makes me think comfort food. Butter makes recipes better!

The ingredients needed for this easy recipe include the following items:

  • 1 1/4 cup flour
  • 2 teaspoons baking powder
  • 1 Tablespoon sugar
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 4 Tablespoons butter
  • 1 1/2 cups 1% milk (or skim)
  • top with syrup

This recipe makes 12 pancakes and takes only about 20 minutes to make. Simple and good!

Just as Delicious the Next Day

I often make a double batch of these butter pancakes so we will have some leftover for the next day. This makes breakfast even easier, which I love as a busy mom. All we need to do is simply pull the pancakes out of the fridge and warm them up in the microwave. We top them with syrup, or some fruit and whipped cream for something different. It’s just that easy to make a delicious homemade meal. This works perfect for when we have school or a game.

Easy Homemade Comfort Food Butter Pancakes

My Easy Homemade Comfort Food Butter Pancakes are a delicious way to deliver a yummy breakfast to your family. This butter pancake recipe is made from scratch with common ingredients most people already have in their kitchens. The butter is built right into the pancakes, so there is no need to top the pancakes with butter. Top them with syrup; they are so scrumptious! This will be a family favorite!

Ingredients  

  • 1 1/4 cups flour
  • 2 teaspoons baking powder
  • 1 Tablespoon sugar
  • 1/2 teaspoon salt
  • 4 Tablespoons butter divided into 3 melted Tablespoons and 1 Tablespoon patty of butter
  • 1 1/2 cups 1% milk or skim milk
  • 1 egg beaten

Instructions 

  • Combine the 1 1/14 cups flour, 2 teaspoons baking powder, 1 Tablespoon sugar, and 1/2 teaspoon salt together in a bowl. Stir well.

  • Combine 3 Tablespoons melted butter (slightly cooled), 1 egg, and 1 1/2 cups 1% milk. Beat egg and stir well. Combine wet and dry ingredients and stir well.

  • Add 1 Tablespoon of butter to pan, spread butter all over frying pan. Heat pan over medium low heat. Pour 1/4 cup scant pancake batter onto frying pan. Flip pancakes when wet top begins to cook (watch to make sure they don’t burn on the underside), be sure to flip over to cook both sides. Done when golden. Recipe Note: The first few pancakes tend to be more saturated with butter so turn out thinner than the rest of the batch. Make sure you cook them long enough or they will be pale.

  • Top with syrup and serve.
