This is the real deal. The only difference is that Grandma made hers with a mortar and pestle. You get to use a blender or food processor. Fantastic, bright green color, freezes well.
Ingredients:
- 6 packed cups fresh Basil
- 1/4 cup Extra Virgin Olive Oil
- 1 cup Pine Nuts
- 1-1/2 cups Parmesan Cheese, shredded
- 9 cloves garlic, peeled
- salt and pepper to taste
Instructions:
- Peel garlic and process until minced. Add pine nuts, process until smooth. Add oil and cheese, process until smooth. Cram all the basil leaves into the blender or food processor (I like using the food processor better than the blender.) Process until smooth. Salt and pepper to taste. Serve on hot, whole grain pasta, 1-2 Tablespoons.
- Serving Size: Makes approx 40 – 1 Tbs servings. A little goes a long way.
