Homemade Mayo

Ingredients:

  • 1 egg
  • 1 tablespoon lemon juice
  • 2 teaspoons Dijon mustard
  • 3/4 cup to 1 of olive or canola oil (or you can mix the two tog
  • sea salt and freshly ground pepper to taste

Instructions:

  1. Put the egg, lemon juice, and mustard in a blender.
  2. Add a bit of salt and pepper.
  3. Process until combined.
  4. With the motor running, pour the oil into the egg mixture very slowly through the hole in the top of the blender. It must come down in a thin, steady stream or it will not emulsify.
  5. Process until thick and creamy.
  6. If necessary, add more salt and pepper.
