Keto Bacon and Cheese Biscuits

Good Keto biscuits are hard to come by. These bacon and cheddar ones are the perfect drop biscuit. Craggily, buttery, and filled with bacon and cheddar. Perfect in every way and we’d even dare to say they hold a close spot in our hearts to our homemade biscuits.

  • Cooking spray

  • 2 c.

    almond flour

  • 1/2 tsp.

    baking soda

  • 1/4 tsp.

    kosher salt

  • Freshly ground black pepper

  • 1

    large egg

  • 5 tbsp.

    melted butter  

  • 1/3 c.

    sour cream

  • 1 c.

     chopped cooked bacon

  • 1 c.

    shredded cheddar

Directions

    1. Step 1Preheat oven to 350°. Grease a large baking sheet with cooking spray. In a large bowl, whisk almond flour, baking soda, salt, and a few cranks of black pepper together. Add egg, melted butter, and sour cream and mix until just combined. Fold in bacon and cheese. 
    2. Step 2Using a spoon, drop biscuits by the spoonful onto prepared baking sheet 2” apart. 
    3. Step 3Bake until golden, 20 minutes. Let cook on baking sheet for 10 minutes.
