In early colonial America, meals were very different from what we know today. There was no meal called “lunch”. Dinner was the biggest meal, which was served midday. This typically was the largest meal of the day, and Supper was the evening meal which was a lighter fare. Regardless of the meal, spices were not easily had. Especially exotic ones that had to travel great distances. To pay tribute to all those great flavors, we decided to pay homage to Moroccan spices.
