This recipe falls in line with all other dinners I make. One meal for the whole family. Everyone in my family, especially my kids, have various food preferences. Instead of being a short order cook I aim to make one meal, with adjustments, for everyone. A one pot meal is a great option. I wanted to stay true to Martha Stewart’s One-Pan Pasta‘s basic recipe with minimal ingredients but tweak the flavor combination from Italy to Asia. From changing the pasta to soba and basil to cilantro it transforms into a new dish! I also added a few traditional Indian spices. Ultimately you’re left with the basic concept from the original recipe but a whole new flavor palate. It’s a relatively quick and easy recipe to make! The family enjoyed! Ingredients

Soba Noodles (good quality)

Shallot

Sam Marzano can crushed or diced tomatoes
16 ounces
Coconut Milk (canned full fat)
1 handful
Fresh Cilantro

Juice of 3 fresh squeezed Limes
1 teaspoon
Garam Masala

Garlic Cloves chopped
1 teaspoon
Ground Ginger
1/2 teaspoon
Ground Cumin-
Kosher Salt and Black Pepper to taste

Directions
- Place the following ingredients in a large pot: canned tomato, coconut milk, finely sliced shallots, garam masala, ginger, cumin, garlic, juice of 2 limes and 1/2 cup water.
- Give the mixture a stir.
- Add in the soba delicately into the mixture. Ensure the soba is fully covered by the mixture.
- Add a pinch of kosher salt and black pepper.
- Bring pot to a boil while covered.
- Check frequently and gently stir with tongs or a large wooden spoon to ensure noodles don’t stick together.
- After mixture is boiling bring to medium to low heat and start timer at 2 minutes. Check noodles after 1 minute to see if cooked. If fully done turn off heat immediately. If not cook for another minute.
- Serve pasta with sauce in deep bowl
- Garnish with fresh cilantro, kosher salt, black pepper and fresh lime juice.
