Super easy and quick pork belly with shallot, mushrooms, cherry tomatoes, and heavy cream for building muscle mass on the ketogenic diet!
Ingredients:
- 175 g pork belly
- 1 shallot or garlic for less carbs
- 250 g mushrooms
- 100 g cherry tomatoes
- 1 tbsp olive oil
- 3 tbsp heavy cream optional for extra calories
- salt to taste
- black pepper to taste
Instructions:
- Pat the pork belly dry and season on both sides with salt and pepper
- Heat a frying pan on medium-high heat and add 1 tbsp olive oil
- When the oil begins to smoke, add the pork belly
- When the pork belly detaches from the pan, flip it
- After 1-2 min, add in the mushrooms and the cherry tomatoes
- Season with salt to taste and stir frequently for around 5 min (until the mushrooms wilt)
- Add the heavy cream and stir for 2 min until reduced
- Serve and enjoy!
