Ingredients:

  • 8 ounces whole cremini mushrooms, stems removed and reserved for another use
  • 2 red bell peppers, chopped (2 cups)
  • 1 large fennel bulb, chopped (2 1/2 cups)
  • 1 large zucchini, chopped (2 cups)
  • 1 large red onion, cut into 8 wedges
  • 1 pint cherry or grape tomatoes
  • 5 garlic cloves, chopped (2 Tbsp.)
  • 2 tablespoons olive oil
  • 1 ½ teaspoons table salt, divided
  • ¾ teaspoon black pepper, divided
  • 1 pound penne pasta, prepared according to pkg. directions
  • 2 cups ricotta cheese
  • 4 ounces provolone cheese, shredded (about 1 cup)
  • 1 large egg
  • 1 large egg yolk
  • ½ cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • ¼ teaspoon cayenne pepper
  • 8 ounces pre-shredded mozzarella cheese (about 2 cups), divided
  • 4 ounces pre-shredded Parmesan cheese (about 1 cup), divided

  • 1 (24-oz.) jar marinara sauce, divided
