Ingredients:

  • 1 1⁄4 cups homemade plain bread crumbs
  • 3 tbsp. freshly grated pecorino romano
  • 1⁄2 cup freshly grated parmigiano-reggiano
  • 2 cloves garlic, minced
  • 2 tbsp. chopped fresh mint
  • 3 tbsp. chopped flat-leaf parsley
  • Salt, preferably kosher
  • Freshly ground black pepper
  • 1⁄2 cup extra-virgin olive oil
