Ingredients:
- 1 1⁄4 lb. pork loin, trimmed and cut into 1″ cubes
- 1 Tbsp. dry sherry
- 2 Tbsp. soy sauce
- Peanut oil
- 1 cup cornstarch
- 1⁄3 cup white distilled vinegar
- 1⁄2 cup sugar
- Salt
- 12 drops red food coloring
- 1 small onion, cut into 1″ pieces
- 1⁄2 large ripe pineapple, peeled, cored, and cut into 1″ chunks
- 1⁄2 small red bell pepper, cored, seeded, and cut into 1″ pieces
- 1⁄2 small green bell pepper, cored, seeded, and cut into 1″ pieces
- 4 thin “coins” of peeled fresh ginger
- 1 clove garlic, minced
