Ingredients:

  • 1¼ lb. pork loin, trimmed and cut into 1-in. cubes
  • 1 tbsp. dry sherry
  • 2 tbsp. soy sauce, divided
  • 2 tbsp. peanut oil, plus more for frying
  • 1 cup cornstarch, divided
  • ⅓ cups distilled white vinegar
  • ½ cups sugar
  • Kosher salt
  • 6 drops red food coloring
  • 1 mall onion, cut into 1-in. pieces
  • ½ large ripe pineapple, peeled, cored, and cut into 1-in. chunks
  • ½ small red bell pepper, cored, seeded, and cut into 1-in. pieces
  • ½ small green bell pepper, cored, seeded, and cut into 1-in. pieces
  • 4 thin “coins” of peeled fresh ginger
  • 1 garlic clove, finely chopped
  • Cooked white rice, for serving
