Ingredients:

  • 8 Chinese dried black mushrooms
  • 1 lb. veal sweetbreads, cleaned
  • 2 slices lemon
  • 1⁄2 cup chicken stock
  • 1⁄4 cup oyster sauce
  • 3 Tbsp. dry sherry or sake
  • 1 Tbsp. soy sauce
  • 1 tsp. sugar
  • 3 Tbsp. extra-virgin olive oil
  • 1 medium yellow onion, peeled and minced
  • 1 clove garlic, peeled and minced
