Wilma Hershberger’s Homemade Cucumber Reli

Ingredients:

  • * 6 large cucumber, finely chopped and unpeeled
  • * 4 large onion
  • * 4 large green pepper and 2 red
  • * 2 tablespoon salt
  • * 5 cup sugar
  • * 2 cup white vinegar
  • * 1 tablespoon whole celery seed
  • * 1 tablespoon yellow mustard seed
  • * 1 1 /2 teaspoon turmeric
  • * 2 drop green food coloring

Instructions:

  1. Mix the first four ingredients in large bowl and set sit loosely covered overnight.
  2. Drain.
  3. Add the rest of the ingredients starting with sugar.
  4. Add and stir everything until well-combined.
  5. Cook over low heat for about 45 minutes until all the juice has boiled away.
  6. Put into sterilized jars and seal.
