Provençal Mustard

The French love their mustards, and they make them in a wide variety of flavors. One of our favorites is a red pepper and tarragon blend, which makes a perfect condiment for picnic food like the poached salmon or sliced filet of beef. Don’t forget to try it spread on sandwiches, too!

Ingredients

  • 2 large roasted red peppers, jarred, or homemade
  • 1 cup Dijon mustard
  • 2 tablespoons white wine
  • 1 tablespoon chopped fresh tarragon
  • 1 tablespoon chopped fresh flat-leaf parsley
  • Freshly ground black pepper

Instructions

  1. Place the roasted peppers in a blender or food processor and process until smooth.

  2. In a medium bowl, combine the roasted pepper purée, the mustard, wine, and herbs. Season with black pepper to taste.
