(8-oz.) block cream cheese, softened
- 3/4 c.
coconut flour
- 1 tsp.
stevia
- 1/2 tsp.
pure vanilla extract
- 1 tsp.
cinnamon
- 1/4 tsp.
ground nutmeg
- 1 c.
grated carrots
- 1/2 c.
chopped pecans
- 1 c.
shredded unsweetened coconut
Directions

- Step 1In a large bowl, using a hand mixer, beat together cream cheese, coconut flour, stevia, vanilla, cinnamon, and nutmeg. Fold in carrots and pecans.
- Step 2Roll into 16 balls then roll in shredded coconut and serve.
